At The Quarter Butcher, we bring in the whole animal, that means what you see in our case was broken down right here, by hand, with care and expertise.
We use seam butchery, a traditional technique that follows the natural muscle lines of the animal. This approach preserves tenderness, maximizes flavor, and allows us to offer a wide range of cuts — not just the ‘popular’ ones. It's how we respect the full animal and minimize waste.
